Hash Brown Bake


One of my dearest friends came over a few weekends ago for a slumber party. Since she is the Pugancious Vegetarian I wasn't about to serve meat for breakfast!

Intro a twist on my Mom/Grandmom's Hash Brown Bake:
1 26 oz frozen hash brown potates
1 stick margarine melted
1 can cream of mushroom soup (Non-Vegetarians can use cream of chicken)
80z of sour cream
16 oz of Shreded Cheddar Cheese
Onion powder
Adobo powder (optional)
Garlic Powder
Black Pepper

Mix together and cook at 350 uncovered for 1 hour. You can make the night before and pop in when you wake up (great for busy holiday mornings too)!


I served it with Maple flavored Morningstar Sausage. Enjoy!

Blondie Brownie Treat

I found a recipe for blondies and modified it a bit to make them easier and fudgier- not a crumb left a day later so definitely a hit!

1 1/3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup packed brown sugar
1/2 cup butter, softened
1 egg
1 teaspoon vanilla extract
1/2 cup chopped walnuts
Vegetable oil- 1/4 cup or less


Pre-heat oven to 350 degrees . Spray non stick spray in an 8x8 inch pan.
Mix all ingredients together, add vegetable oil as needed to make the batter moister (next time I think I'll try an egg white instead). Spread evenly in prepared pan. Bake 30 minutes give or take your oven. Cool slightly. Cut and eat! Great out of the pan (demonstrated by the Hubby)!

Oh coffee!

I’ve always enjoyed coffee but didn’t necessarily depend on it.

Most mornings I’d drink tea and then a couple times a week grab a coffee. BUT Santa brought me a Keurig and man oh man this is one of the best gifts I’ve ever gotten! Since Christmas I’ve had coffee every morning. If you can try a cup of joe from this little machine you will not be disappointed. I haven’t tried my refillable k-cup yet (a friend of mine has coffee for me from his family’s plantation and I think I’ll save the inaugural cup for that), but what a great idea to be able to use it and be green.

PS- the apple cider k-cups are down-right yummy! I was worried they’d be plastic like or taste like fake apple but much to my surprise it’s like hot cider from an orchard.

Goodbye 2010, Hello 2011

Here is one of my fav pictures from 2010 (the fella and I at my best friend's wedding).

2010 brought so many wonderful things into my life- Weddings (Josh and Jocy), Births (Little Noah), Graduations (Brian), Vacations (Miss you NOLA)! Not to mention new product lines to Little Gems- key fobs, fabric covered button creations, soap experiments and th list goes on!
